Set your oven to broil.
Place peppers on cookie sheet about 6 inches below the element. Leave oven door ajar.
Roast and rotate peppers until they are blackened on all sides.
Remove from oven and let cool.
Dip in water and peel outer blackened skin and remove seeds.
These can now be stuffed with bean mixture – Roasted Green Chile Stuffed Peppers or frozen.
You can also use your grill to fire roast your chilies. Use the same method as you do in the oven. Roasting and rotating the peppers until they are blackened on all sides.
