12 ounces silken tofu, block
1 1/2 tablespoons lemon juice
1 teaspoon mustard
1 1/2 teaspoons apple cider vinegar, or white
1 teaspoon sugar
3/4 teaspoon onion powder
1/2 teaspoon salt
1/3 cup canola oil
Process all ingredients except oil in blender or food processor until smooth.
On high speed, slowly add oil just a few drops at a time until smooth and creamy. Chill at least one hour before using. Mayo will thicken as it sits.
Makes 1 cup.
