Bean soup

This recipe is quick to make and super cheap! Make extra and take it for lunch! Dinner is ready in less than 30 minutes.
Serves 4
10 minutes to prepare
20 minutes to cook
1 tablespoon olive oil
3 cloves garlic , minced
3 green onions, minced
1 celery rib, minced
1 quart vegetable broth
2 cans cannellini, beans, mashed (we use unsalted - if you use salted, adjust salt)
1 can fava bean, mashed
1 teaspoon sage, dried
1 teaspoon black pepper
2 teaspoons salt
4 dashes hot sauce, like Tabasco
Mash the beans.

Saute garlic, onions and celery til soft.

Add remaining ingredients and heat through.

If desired, thicken with 2 T flour.

We like to garnish it with vegan sour cream, a few corn chips and some hot sauce.
