Fettuccini with Alfredo Sauce

This is a family favorite. It’s great on whole wheat pasta with some steamed broccoli. We like it as a pizza sauce too. This version is dairy free and healthy!
Serves 6

12 minutes to cook
1/2 cup raw cashews
1 1/4 cups water
1 tablespoon miso
2 tablespoons lemon juice
2 tablespoons tahini
3 green onions, chopped
2 cloves garlic
1/2 teaspoon salt
1/4 cup nutritional yeast
2 tablespoons olive oil
12 ounces whole wheat fettucini, prepared per package instructions
Blend together cashews and water until completely smooth and creamy. If you don’t have a vita-mix, a food processor works just as well.

Add remaining ingredients except oil and pasta and puree until smooth again.

Slowly add oil until thick and oil is emulsified.

Process until hot or heat in a sauce pan over low heat for 4-5 minutes, stirring frequently.

Serve over cooked fettuccini or linguini noodles.
