Vegan Breakfast Burrito

Here’s another quick-and-easy breakfast for those days you want something other than a smoothie to start your day.
Serves 2
10 minutes to prepare
10 minutes to cook
Ingredients
1/4 cup red onion, minced
1/2 cup firm tofu, mashed
1/4 cup smoked sun dried tomatoes
1/2 cup spinach
1/2 Tofurky sausage, or your favorite vegan sausage
2 tablespoons vegan sour cream
2 whole wheat flour tortillas
Directions
Prep your ingredients.

Saute onions on med-high heat with some cooking spray.

Add sun-dried tomatoes and sausage.

Add your tofu.

Add pepper…

And salt.

Toss in spinach last.

When heated through and the spinach starts to soften and wilt, toss the mixture into a whole wheat flour tortilla. We usually nuke our tortillas for a few seconds to get them soft and warm. You can also toss them on top of your mixture in the pan for a few minutes to heat and soften. Top with sour cream, roll ‘em up and enjoy!
