Vegan Stuffed Baked Potato Skins

This is quick to make and delicious! You can modify the ingredients to use whatever you have on hand. We microwaved our potatoes to cook them quickly.
Serves 2
20 minutes to prepare
12 minutes to cook
3 white potatoes, baked and sliced
2 cups broccoli, chopped and steamed
1 cup vegan cheddar
4 green onions, chopped
3 jalapeno peppers, chopped
1/2 cup vegan sour cream
Preheat oven to 365 degrees. Microwave potatoes until cooked or steam them until done in your Instant Pot. Slice potatoes and arrange on a baking sheet
Adding your broccoli, green onions and jalapeno peppers on top of your potatoes.
Add cheese.
Bake at 365 degrees for 12 minutes or until cheese is melted.
Top with sour cream and enjoy!
